Since winning everyone over on Ramsay's Best Restaurant , Prashad has grown in size and reputation, and so too has the Patel family. In this, their second book, Kaushy returns the focus to the heart of Indian home cooking.
Traditional recipes have been simplified using readily available ingredients. These are the quick dishes that can be prepared in the evenings when you're tired after work, meals to leave bubbling away while you relax at the weekend and feasts for special occasions - as well as everything you need to serve the breads, the rice and the chutneys. You'll also find many recipes drawing influence from British, Chinese and Italian cuisines - a perfect combining of cultures in the kitchen. And, because Gujaratis are well known for their sweet teeth, there are plenty of snacks and treats too. Life is all about balance after all.
Times have changed and what we eat should suit our lifestyle, but whether you have 20 minutes or two hours, cooking should be enjoyed, bringing both you and those you are cooking for pleasure.
From bhajis to feast biryanis to beans on toast, Gujarati-style, here are more than 100 recipes to bring warmth, taste and texture into your home, all made with the Patel's characteristic love and passion for vegetarian food.
Prashad at Home isn’t quite the Bundobust cookbook, but close enough – all kinds of incredibly tasty fritters, breads, snacks, sandwiches, salads, curries and other spicy delights.
Kaushy Patel is responsible for some of the best vegetarian cooking in Britain today. Without her there would be no Prashad, with its delicate, modern Gujarati cooking. There would be no Bundobust, with its small-plate British-Indian food of incomparable deliciousness. Without her, my own British-Indian cooking would be seriously lacking. She knows how to pack a dish with flavour, aroma and colour. She knows that every meal is improved with massive quantities of garlic and chilli. She knows that deep frying makes some of the best food you can put in your mouth.
I can personally vouch, in the strongest possible terms, for the Spiced potato and pea toastie, Crispy cheese and potato balls, Spicy fried aubergines, Griddled pepper and paneer (substitute halloumi!), Semolina-encrusted sweetcorn fritters, Aromatic vegetable and lentil soup, Crispy okra fries, Fluffy tomato rice and Indo-Chinese marinated paneer stir-fry (find out what happens when you meld Chinese and Indian cuisines!).
This is a dedicated vegetarian cookbook that is packed with recipes. Another cookbook that will bring light, joy and unbelievable flavour to your life for years to come.
I’ve been enjoying meals from this book for the last month. Excellent for Veganuary. The meals are quick easy and delicious and have helped me to realise my dream of eating Indian food for breakfast, lunch and dinner. Even though the liberal use of asafoetida has made my house smell like an armpit I recommend this book unreservedly to anyone who also loves scented candles.
A Gujurati transplant to the UK who owns a restaurant created this wonderful cookbook, designed for cooking at home. I love the sections (longer main courses vs quicker ones to make), the layout and photos are just gorgeous, and it was nice to see a book that features an excellent grandmother cook (vs another sexy 27 year old). Beautiful. Just loved this. Can't wait to try many of these recipes.
