This is a beautifully presented cookbook organised into 2 main parts, one on fish and the other shellfish. Each of these parts is arranged alphabetically by type of animal. For each type of fish or shellfish, there is a photo and a description of the creature's provenance, typical habitat and eating qualities. The seasonality, catching methods, typical size, identifiable features and sustainability are listed. Then follows details of how best to store, handle and cook each type.

Finally there are a small number of recipes for each type of fish or shellfish.

This is not really a book to read. It is a book to use. The blurb on the back describes this book as "the definitive guide to cooking great fish". It should say "Australasian fish" although many species covered do have ranges beyond Australia and New Zealand. Apart from that, the blurb is accurate. There are also many invaluable cooking technique tips, something missing from many cookbooks.

There are over 130 recipes. I've tried several. They are work well. (Flathead with Sauce Gribiche has already become a favourite.)

This is easily the most complete seafood cookbook I have seen. I now refer to it frequently.

This is a great cookbook. There are so many wonderful recipes that are easy to try. If you love fish, it's great to give this book a go.
