This cookbook is worth purchasing for the creamy wild rice soup alone! A lot of the recipes seem easy to veganize as well. This would be a good gift to give to someone who isn't vegetarian but would consider meatless Mondays because all of the recipes are familiar and comforting.
Use weekly and one of my favorite cookbooks. My mother always had Betty Crocker books when I was growing up she used. When I found about having food allergies that caused me to have to go Vegetarian I found other books and then suddenly I stumbled across this one by accident. It's become a book for learning how to do new things in my kitchen and sharing the love of cooking with my son who has autism . His eyes opened wide seeing what he could do with simple vegetarian ingredients as he has the same food allergies. I can't wait to try more out of the book. Recommend to anyone who is vegetarian or not it's a very fun book. Our favorite right now is the Vegetarian Moo Shu!
As with all Betty Crocker cookbooks, these recipes are clearly written, well-tested, and include nutritional information. Sections are based on snacks, burgers/wraps, soups, pastas, casseroles, slow cookers, etc. Would have given it 3.5 stars as these are basic recipes but it is a helpful source for a family looking to include more vegetarian options in their diet.
Solid cookbook, with a nice variety of recipe types. Measurements and cooking times are reality based. The recipes I tried came out as expected. Would check it out of the library again.
I found the cookbook okay. It wasn't something geared specifically to me because it had a lot of ingredients calling for loads of cheese, breads, grains, etc. I'm in a different genre of vegetarianism I guess because I'm trying to stay away from breads/wheat & loads of dairy. However, if you are a vegetarian who still eats breads & cheese then I'd recommend this cookbook because it has numerous amounts of recipes. I just wouldn't recommend this book to someone who is trying to only eat fruits and vegetables with a "cheat" day of some cheese or bread just because the majority of the recipes call for breads and cheeses as well. It just seems like quite a few fattening recipes to me.
Some of the recipes in this book are 5-star and some are only 3 or 4-star. I am going to give this 4-stars as a fair middle ground. This is a great starter vegetarian cookbook that sometimes uses convenience foods. If you don't mind that then this is great. If you are looking for a total "from scratch" experience then you might want to pass this one by. This book, however, is in my regular weeknight rotation due to the ease.
Some of the recipes are good, but some are along the lines of "buy these three pre-packaged foods and mix together" which I find kind of icky. I guess I just don't expect a vegetarian cookbook to call for Velvetta. I cook at home to eat less processed crap, and there are definitely some decent options in here, but you have to wade through some filler.
Really, I've read this book through, and have thus applied it to our life :) It's a great starter vegetarian cookbook, and we've enjoyed several recipes from it such as Curried Sweet Potatoes and Lentils (no, really!) and Risotto Primavera (yummers).
Some of the recipes in here are 5-star vegetarian recipes and others are more 3-4 star ones. But I LOVE it! Cody's even loved many recipes from this no-meat book. :)
