The book was on my to-read shelf, but it probably would not have been available at the library, and this is a book I want to have on hand as a reference tool. This is going in a handy to reach place in my kitchen. I’m thrilled to own it.
Wow! Even though I’m not interested in many of the recipes (most of the meat substitutes for instance) this gets 5 full stars from me because the recipes are incredibly inventive and because, even though I know a lot about vegan substitutions for non-vegan foods, I learned so much. Some of what I learned is different egg substitutions depending on the original purpose of the egg in the recipe and how it’s possible to make your own healthier sweeteners. The four pages long complete guide to vegan food substitutions at the end of the book is worth 5 stars. As I finished the book, I noticed that chart, and was very grateful to see it; there is so much good information through the book, but having the summary at the end is very helpful. You can use them in any recipe, not just the recipes included in the book.

I love that whole wheat pastry flour makes a frequent appearance. If I bake, that’s the flour I want to use if I’m using wheat flour. A lot of the desserts looked great to me. Of course. The crispy chocolate cereal candy (I shouldn’t have been reading this book when I was hungry), the purely pound cake, and the GF-ingerbread cake looked extremely appealing. I also got some terrific ideas for sandwich spreads.

This is a great little reference book for finding substitutions for mot only meat, eggs and dairy, but also alternatives to processed sugar, soy products, gluten and fat. Helpful in adding more knowledge to cooking vegan food. It's also full of recipes like the Choco PB Sauce which was pretty darn tasty.
Good explanations for substitutes; includes recipes, although I'm not sure I'd use many of them, they aren't quite our taste; relies on non-dairy butter substitutes and tofu a lot.
As someone who has been raised and still eats from the Standard American Diet, "SAD", I educate myself with the necessary information to equipt me with the tools to make healthy Lifestyle changes. This book is an excellent start for anyone inexperienced and experienced. I've invested in the book that follows. *The Complete Guide to Even More Vegan Food substitutes.
What a great (and helpful) idea for a book. I found this while shelf-browsing at my library, and was so eager to read it. What a disappointment. The substitution solutions in recipes: vegan butter or high calorie oils for butter, cane juice for brown sugar, .... agave, maple syrup, recipes that call for cup after cup of artificial and unhealthy ingredients. I have to say, this book is proof that you can go vegan and still eat an unhealthy diet.
Livre plutôt pratique. J’utilisais déjà depuis un bon moment les graines de chia et/ou de lin pour remplacer les œufs dans la cuisson et les laits végétaux pour remplacer les laits de vache mais ce livre m’a renseigné un peu plus sur quels laits sont meilleurs dans quel contexte, etc.

As a vegetarian by allergy this was not it, one of the suggestions for a crab substitute is imitation crab... which is white fish. Also various recipes call for beef flavored vegetable bouillon which is made with beef fat.
It’s great for anyone starting out and is Veterans who are always making new recipes and need a substitute... Should be a part of every Vegans Book Collection...
This is a must have book if you are vegan and you like to cook. This is the best and most helpful cookbook for vegans that I have ever read. It is set up in a very user-friendly manner with color-coded sections for each substitution section. Do you need to substitute for eggs? Go to the orange section. Honey substitutions? Blue. BAM! So easy!
Each section starts out with a chart for easy substitution finding and follows with recipes that explain the different methods of substitutions. The recipes look fantastic (I haven't tried them yet, and some look very complex, but they all sound so tasty). It covers everything from cakes to waffles, mayonnaise to buffalo wings, and pizza to Shepard's pie. Each section begins with a sometimes humorous, but always truthful, page or two about why being vegan is better than eating animal products and why different substitutions are better in different instances. Each chapter explains how to change any recipe to make it vegan. Need to bake a cake? Use applesauce instead of butter or eggs, almond milk instead of cow's milk, and molasses instead of honey.
In the back of the book is a chart that compiles all the substitution information and presents it in very tiny font. It would probably be helpful to blow it up by 150% and laminate it and stick it on the kitchen wall.
The colored pages, neatly laid-out charts, and fun editing make this book a 100% win.

I had mixed feelings about this book. The book has many substitute ideas, but also many recipes, which the title doesn't give away if u are ordering online or browse first( and the recipes all look/ sound great!) I like that the recipes are labeled as wheat free, gluten free, more experienced cooks etc- always a plus and nice to know if you need to accommodate someone with diet restrictions. I don't like that many of the substitutions call for store bought products- if you live outside of N. America or Westernized countries ( like I do) these options are just not available, rendering the recipes useless. The recipes are also heavily soy-based, which is fine for me but some people may not like. That said, there are still a lot of good, homemade substitutions and informative facts that redeem the book enough to make it useful- especially for new vegans with inexperience adapting recipes or people wanting to reduce their meat intake. It also explains some theory behind why substitutions are preferential for animal products and what roles certain ingredients ( like eggs) play in a recipe, which is interesting.
Wonderful and very practical guide for substituting vegan ingredients for non-vegan ingredients as well as substituting one set of vegan ingredients for another set of vegan ingredients (i.e. your pantry doesn't have some ingredients and you need to get creative or you want to avoid certain ingredients [i.e. gluten, soy, processed sugars]). Includes some recipes for making your own substitutes as well as annotated recipes where they put a wide variety of substitutions to practice. Although the books includes contextual advice (i.e. certain egg substitutions are better when you need a binding agent versus say a leavening agent) it might have been nice to have more food chemistry in the book [i.e. Cooking for Geeks] to guide the theory of substitutions further. The recipes made me hungry and wish I had a food processor.
Ein weiteres Geburtstagsgeschenk mit dem Motto der veganen Ernährungsumstellung. Dieses Kochbuch ist nicht nur voller Rezepte, sondern auch von Informationen. Anders als die anderen ist es nicht nach Frühstück / Mittag / Abendessen / Nachtisch sortiert, sondern nach Ohne Milch / ohne Käse / ohne Ei / etc. Damit kann man sich ein gutes Bild der Ersatzmöglichkeiten machen, aber auch verstehen was diese Umstellung beinhaltet, nämlich ein Umdenken. Je nach Funktion (z.B. fluffig machen oder binden) braucht man andere Zutaten um in regulären Rezepten das Ei zu ersetzen. Obwohl handelsübliche Zutaten benutzt werden, bin ich ja eher ein Anstrengungsmuffel und finde die Rezepte etwas zu aufwendig. Außerdem ist die Aufteilung umständlich wenn man z.B. einfach nach einem Hauptgericht sucht.

A chapter on gluten substitutions is also included for those with Non-Celiac Gluten Sensitivity (NCGS) and Celiac Disease. While I don't refer to this book often, it's good to have on the shelves and a great suggestion for those who need help finding suitable replacements for the animal byproducts currently in their diets.
I absolutely love love love this book. This book is great for the former meat eater who misses the textures, tastes and smells of things non-vegan foods. The recipes are pretty easy to follow and most of the ingredients are readily available. Granted, the egg salad recipe won't taste exactly like egg salad, but it's not bad. And the "pepperoni" is more like spicy ground beef. But the Western Bacon Cheeseburger - that was pretty good.
This was the very first vegan cookbook I looked at after making the switch from vegetarian to vegan. While I haven't made many of the recipes, the substitution lists and suggestions are useful and accurate, and the recipes I did try were great. I won't lie, this isn't your healthy vegan cookbook, and I'm not sure how into veggies either of these authors are. But the recipes are full of soul and are good comfort recipes.
Handy! A must have for adapting recipes. While its strength is mostly on the substitution side of things there are recipes too. My only niggle is with the organization of the book, the substitution charts should have been more of a focal point, and when it comes to the recipes - they are scattered throughout which can make them hard to locate (which is why my copy has lots of flag markers). Aside from that, it's a wonderful resource.
I'm considering buying this title even though I'm not vegan. The substitutions make cooking for friends or family with any sort of food restriction a snap using non-exotic (usually inexpensive) swaps. It's a reference as much as a cookbook, and I can see many reasons to have it on my cookbook shelf.
Although this book contains recipes, it really follows through on its title as a complete guide to vegan food and substitutions. It's packed full of information both for those who are making the switch to veganism and for those who want to be well informed about the vegan diet and the use of animal byproducts.
This a handy reference for those new to vegan cooking. It offers easy suggestions for creating your own substitutions when you can't find them ready-made. Some of the recipes are very complicated though, which is why I'm only giving it four stars.
This book is really good and has some fantastic recipes. I just expected it to be more of a guide than it is and I have been surprised by other books more. Still a really good reference that just might make its way onto my list of must buy books :)
I love this book, it contains such useful information about vegan food substitutions. Every once in a while, I pull this book off the shelf to search for a specific vegan food substitution for a recipe -- and end up re-reading the whole book.
