This is an important book if you want to learn Puck's repetoire. Not surprisingly, much of his food has a classical foundation, with stocks being the basis of almost every dish, and the amounts of butter reaching mind-boggling portions at times. For example, one of his risottos intended for two people has three quarters of a stick of butter in it. You will get plenty of good recipes out of here, but if you try to eat like this everyday it's going to be hard on your arteries.
