I just read that chapter...feel a bit silly for posting the question! Haha. But isn't this kind of a sad thing? Will this mean she won't be able to be with Darius anymore since she will die centuries before him? And how many times can she give someone their humanity back before she's 'depleted'? Couldn't she just stay a vampyre forever?
It's only sad if you value Aphrodite more than the many, many people she can grant second chances. How long it will take depends on how often she uses her gift. The Goddess left it up to Aphrodite. She could stay a vamp forever - if she was self-serving...
