In praise of the breadmaker

I had forgotten about banana bread. It must be one of the best things ever - got to make some of that now...

Have you a recipe?

And I was going to put the whole thing in my mouth!

And I was going to put the ..."
Good job they said that Rob. You could have choked!

If you watched Paul Hollywood last night you would have seen he made a bread with ale - very nice it looked too (as did all the breads he made). I'll be watching the following ones too.
Worth a look on iplayer if you missed it.

If you watched Paul Holly..."
I was thinking more of a French style, cheese and wine bread, but yeah, I may have a look at that show.

try do a search for the posts. id search for you but can't from my phone.

I have taken out the walnuts (50g) and sultanas (100g). I also think it was abit sweet so I use less sugar but this is what it asks for:
Water (tepid) 2 tbsp
Vegetable Oil 1 tbsp
Eggs, (beaten) 2
Pale Soft Brown Sugar 175g
Grated Carrots 200g
Ground Nutmeg 1/2 tsp
Ground Cinammon 1 tsp
Wholemeal Self Raising Flour 220g
(I used 2 tsp of baking powder as my flour wasn't self raising)
Method:
Add the Water, Oil, Eggs, Sugar, Carrots, Nutmeg, Cinnamon and Flour to the tin.
Place the tin back in the machine and set program to 'cake'
Set the crust colour to your preference
Press start
After 10 mins, check there is no flour left unmixed at the edges, if there is, scrape into the mix with a plastic spatula.
When ready remove tin from the machine and leave to cool for 10 mins. Then run a spatula around the edge of the cake to loosen and turn out onto a wire rack. Allow to cool for 30-40 mins.
(I mix all the stuff in a bowl first, then dumped in the tin and added the flour, baking powder and spices as I do for the banana bread then mix roughly

Banana Bread Recipe
Ingredients
3 or 4 ripe bananas
2 tbsp oil
3 eggs
30 ml milk (I use soya milk, of course)
120g brown sugar
1/2 tsp salt
100g chopped walnuts (I omit them)
220g plain white flour
2 tsp baking powder
1/2 teaspoon ground cinnamon
Mash bananas. Add the beaten eggs. oil and milk to bananas and mix well. Add the brown sugar and salt and mix again.
Dump into the bread tin.
Add the flour, baking powder and cinnamon on top of the wet mixture.
I use a spatula to roughly mix the flour in at this point as sometimes the machine doesn't do it so well.
Put the tin in the machine and set it to 'cake' or 'quick'. Crust setting to 'light'.
I give it a few minutes then check that all the flour has mixed in well

Can't believe how long these loaves stay fresh for. I'm just coming to the end of my fruit loaf and it still isn't stale!
I find home made bread much more filling than the bought stuff so it takes me longer to get through a loaf.
Think I'll try a cheese and onion one soon or maybe experiment with cheese, onion and tomato mmmmmm.
Just looked back on posts and I made the fruit loaf on the 9th. March!

It is from this recipe and is absolutely lovely. I used 3 bananas instead of 2 and added the choc chips. It is lovely and moist

Only problem was the batteries on my scales seems to have run out so I had to guess the flour and I think I misjudged the water as well. It came out a bit squidgy like a fruit malt loaf and looked a bit funny. But it tasted absolutely delicious so wasn't a disaster after all.
That looks good Ems, I'll have to give that one a try.

Sundried Tomato & Parmesan bread
3/4 tsp. yeast
400g (14oz) strong white flour
1 tsp. sugar
1/2 tsp. salt
50g (2oz) parmesan, grated
75g (3oz) sundried tomatoes in oil, chopped
270 ml. water
I put the machine on the Italian setting and it takes 4hrs 30 mins.
Actual baking time is 50 minutes.
Last time I also added a finely chopped red onion.

I found a ready mix version on the Tesco site so I'm going to try that in my next shop. It's only 89p!

If they do I think I'll stick to making from scratch as it's hardly a task to chuck it all in the pan and turn it on and it only takes a couple of minutes. Also a lot more expensive. Convenient I suppose though.

And they say that Rock n roll is dead! :)
I'm lucky, because where I live, if you take a night time walk past the bakery, you can breathe in that lovely smell of fresh bread. Can a bread maker do that? :)
