Argh finding an all time favorite is harder than it looks as every time I read a great book I tend to think that it was the best. Taste changes with years along with favorite genre. I used to prefer fantasy, then I read horror, then vampires... I am not sure if I would read this series again if I would still love them as much... but still... The book that stuck in my head for the longest as the best would have to be Death gate cycle by Heiss and Hickman. Why? Because I loved the characters in it. Albert and Haplo were so alive. They had both flaws and qualities that you learned to accept (and love). And let's not forget Zifnab, the dragon/god/wizard, whatever he really was. I always had a good laugh with that one. (And was so happy to find him again under the name of Fizban in another of their series.)
