Although mathematics was not on the list of disciplines listed, I think The Universe in Zero Words: The Story of Mathematics as Told Through Equations is worth considering. Here is a review by my co-mod, who is a physicist:

Another one that looks both interesting and artfully produced is Phi: A Voyage from the Brain to the Soul, which I think qualifies as philosophy.
I haven't read either of these yet, but I'd like to.


Also, Sam Kean is incredibly engrossing on the topics of Chemistry and genetics.
