Most of Kay's earlier works are standalone. A Song for Arbonne is my favourite, there, but The Lions of Al-Rassan is also good.

Dharmakirti | 942 comments David Eddings The Redemption of Althalus is a novel I enjoy. It's pretty typical quest fantasy, but it's a fun read (at least I thought it was fun).

That book is so good! Easily one of my favorites that I've read this year so far.

That reminds me. City of Stairs was written as stand alone even though it has a sequel now

Rick Sanderson has a couple true standalones (Elantris, Warbreaker) and you could read the first Mistborn as a standalone even though it's the first in a trilogy.

Chalion, mentioned above, is excellent and standalone. The other books in that world also really standalone (Hallowed Hunt, Paladin of Souls).

House of Shattered Wings is, so far, standalone. Not sure if she's planning other novels in that world. Again, Servant of the Underworld (Aztec magical murder mystery!) is the first in a trilogy but stands alone too.
