In the meantime . . .
The first thing that comes to mind is, of course, the wonderful:

In Watership Down by Richard Adams, the rabbits do a certain amount of digging. Watership Down
The Warrior's Apprentice, by Lois McMaster Bujold. The Warrior's Apprentice
"Founding Father", a short story by Isaac Asimov, which appears in (at least) the anthology Buy Jupiter and Other Stories. Buy Jupiter and Other Stories
A character digs a well (and possibly a cellar) in Little House on the Prairie by Laura Ingalls Wilder. Little House on the Prairie
Cherry Ames: Mountaineer Nurse by Julie Tatham. Cherry Ames, Mountaineer Nurse

Dead End in Norvelt by Jack Gantos Dead End in Norvelt

Digger by Joseph Flynn is about a Vietnam vet who has worked with other vets to get over their PTSD from tunnel fighting by digging a network of tunnels under their small town. Weird book, but interesting.
I thought of _Holes_, by Louis Sachar.

I'm looking for books and literature, where a character is digging a hole into the ground for whatever reason (religious, no reason, adventure)
or a book about someone doing an unusual task and how their souroundings/ society reacts.
Thanks for the help
