National Dishes Report #16
So, it has been a little over 3 months since our last report. And so far, 2023 has been a year of adversity, celebration, challenges, goodbyes and wonder.
In January we marked my birthday and another wonderful family reunion in St. Augustine. We traveled through the Florida panhandle, Mississippi and Alabama. In February we lost our good friend Lauren Verdich. March brought health challenges to some we love including our fur baby Gena. We reconnected with our friend Melissa Blackburn . In April, we celebrated our first Passover Seder with our new friends Neil and Gail W. (This was a wonderful and DELICIOUS experience!) Our friend Gail Morse hosted us for the Aztec March Madness games, baseball opening day, movie night, Oscar night and a traditional Easter. Lauren's son, Jordan (who is a professional chef) and Gail hosted us for a wonderful BBQ dinner...and sent us home for enough food to eat for a week. Of course, food is often at the center of these journeys.
During this period, we tried 61 new items and visited (virtually and otherwise) the cuisines of 24 countries and regions. Locations gastronomically visited for the first time are- Florida; Kentucky; Alabama; Mississippi, the Andalucia region of Spain, Japan's Kanto Prefecture, the Indian States of Punjab and Jammu and Kashmir, and Portugal's Province of Entre-Douro-e-Minho.
I'll post a full list again of all our dishes since we began in August 2021 when we return from our next adventure...which starts tomorrow. Until then, Erin Go Bragh, Alba Gu Brath and Keep a Stiff Upper Lip!
1/11/23- Florida- Minorcan Clam Chowder- a spicy version of a tomato-based chowder devised by indentured workers from Minorca, Spain to Florida.
a Florida Mule cocktail- akin to the Moscow mule...but made with the local Florida Cane Vodka from the St. Augustine Distillery Co.
Spain- Sangria
1/12/23- Florida- Fried Pickles (this is a Southern dish but we are counting it for Florida since we tried in St. Augustine)...but,guess what?-it was first noted in Oakland, California in 1962.
Pulled Pork sandwich...we've had this dish before...but it is popular all over the South so also counting this one for Florida this time.
Kentucky- Moon Pie (a chocolate graham cracker and marshmallow cookie sandwich popular all over the South...but originated in KY)
1/13/23- Florida- Cuban Sandwich- yes...it originated in Cuba... but is now a staple in Florida.
1/14/23-Cuba- Cuban Black Bean Soup; Boliche Criollo- a beef roast with Criollo marinade and stuffed with chorizo; Picadillo Criollo- ground beef braised with onions, green peppers, olive, etc.

Alabama- Redneck Gyro (on the list of Mobile specialties not to be missed...gyro meat with a special Alabama sausage called Conecuh Sausage, Smoked Gouda and Mozzarella with Cajun Tzatziki sauce)
1/19/23-Alabama- West Indies Salad (a tangy crabmeat salad); fried green tomatoes; Catfish; Hushpuppies; Shrimp; Collard Greens
1/20/23- Alabama- Blood Orange Berliner-Weisse Ale from Goat Island Brewing
1/21/23-Mississippi- Seafood Gumbo; Shrimp Po'Boy (Mississippi disputes Louisiana's claim to have originated the po'boy); hushpuppies- A staple all over the South with several states claiming to have been its original source.; Shrimp and Grits (This is a dish allover the Southern US...but apparently originated in S. Carolina- but we're counting it here for Mississippi since we tried it in Biloxi).
2/6/23- Szechuan Province of China- Mapu Tofu- a very spicy dish.
2/8/23- Emilia-Romagna Province of Italy- Majani Chocolate (Majani was the first chocolatier to make hard chocolate- in 1796- and the original store is still in operation!) (A gift from Jean Wilkinson!)
Italy-Bastoncini Ricoperti di cioccolato al latte- Chocolate sticks.
2/15/23- Portugal- Linguas de Gato (Cat's Tongue cookies)
Feb. 24- Portugal- Fig with Walnut Jam
Feb.25- New York- Chicken and Waffles. (Although associated with the Southern US, this dish actually originated in Harlem.)
March 1- Kanto Region of Japan - Shoyu Ramen
England, UK- Red Leiceister Cheese
March 11- Germany- Hamantaschen- a triangular cookie-like dessert that originated with Ashkenazi Jews. Traditionally eaten at Purim because the three corners represent the three patriarchs (Abraham, Isaac, and Jacob).
April 3- India- Keema curry- a ground lamb curry; Baingan Bharta- an eggplant curry-like dish.
Indian State of Punjab- Kulcha (a flatbread very simiiar to naan) originated in Amritsar.
Indian State of Jammu and Kashmir- Rogan Josh- this was a most excellent curry flavored primarily by alkanet flower and Kashmiri chilies.
Italian Region of Campania- Calzone (originated in Naples)
California- San Diego State Ale from San Diego microbrewery AleSmith.
April 6- Our new friends Neil and Gail W. invited us to their Seder Dinner...our first. So attributing the various traditional items in our list to Israel-
Israel- (10)- Matzo; chopped liver (made by Gail Morse...following Lauren's recipe- delicious)!; Hummus; Matzo-Ball Soup; Haroset- a sweet combination of apples, nuts, etc- our new favorite!; latke (a crispy potato pancake- which actually originated as an European Ashkenazi dish); Brisket and Potato Kugel both also originated with the Ashkenazis); Macaroons (probably originated in Italy) and another Ashkenazi dish- Tzimmes- stew typically made from carrots and dried fruits such as prunes or raisins, often combined with other root vegetables.
France- Gigondas Domaine Gour de Chaule- a red wine from the Southern Rhone Valley.
April 7- Colombia - Colombian Coffee- a gift from our friend Cecilia Ortega and her husband who recently went on a wonderful vacation in the country.

-New York- New York Style Cheesecake (Fun fact- Arnold Reuben who developed the now-famous Reuben sandwich also made the first NY Cheesecake- relying mostly on cream cheese rather than other cheesecakes that used heavy cream.)

*****1. Exactly where is up for debate, but somewhere in Asia Minor, the “Sardis acorn” began to spread across Asia and Europe. The Old French term “chastain” is derived from the Latin “Castanea” which is also the scientific name for the chestnut tree. The English called chastains “chesen nuts,” which eventually became the term we are familiar with - “chestnuts.” No matter what you call them, chestnuts can be a yummy and healthy treat if roasted properly.

*****2. Chestnut trees flower in the late spring or early summer. The “female” flowers tend to grow closer together by the tree’s trunk and two to three flowers (each of which produces a fruit) will eventually grow together and form a brown husk or hull. Within the husk, the fruit is contained in a spiny pod called a bur or burr. Eventually, the burrs will turn yellow-brown and open in two to four sections. Each burr contains one to seven nuts.

*****3. Unlike most nuts, chestnuts are rich in carbohydrates. Many populations, especially those where wheat flour was scarce, survived on chestnuts as their sole starch. Eventually the potato came into existence in Europe and Asia and supplemented chestnuts. There are still regions in Italy where chestnut “cakes” are used in place of potatoes.

*****7. The Christmas Song, the one that made chestnuts so famous, was written in 1945 by Robert Wells and Mel Tormé. It was written during a blistering hot summer as an effort to cool off by thinking cool. The Nat King Cole Trio originally sang and recorded the song in 1946. NKC went on to re-record the song later in 1946 and in 1961, both versions accompanied by full orchestra. Broadcast Music, Inc. (BMI) reports The Christmas Song as being the most recorded holiday song and the original 1946 version was inducted into the Grammy Hall of Fame in 1974.
