draft...National dishes report #11
On August 15, 2021...just one year ago...Ramiro and I started this fun project of sampling dishes from all over the world.(I know, it seems like we have been doing it for years...but,no...just one year.) This month we added 18 items to our tally. Three dishes were from three different countries we virtually visited for the first time... Uzbekistan, Turkmenistan and Kyrgyzstan. Seven dishes are from four States or Regions that were visited for the first time...The Japanese Prefecture of Hokkaido, the Chinese Province of Xinjiang, the Mexican state of Nueva Leon and US State of Hawaii.
Overall, we have tried 428 dishes. 272 of those are from 69
Countries and another 136 are from 49 distinct National Regions.

1. The legendary Nazca Lines are an impressive collection of giant pre-Columbian geoglyphs that have been etched into the desert sands. Encompassing an area of 200 sq. miles (517 sq. kilometers), these 2,000 year old designs were created by the Nazca people, who settled in the southern Peruvian coastal plain between the Inca and Nazca Valleys. It is an area known for being one of the driest places on Earth. The low amount of rain, wind and erosion has contributed to these geoglyphs remaining largely unscathed throughout the centuries.

✔2. The lines were discovered in 1927 by Peruvian archaeologist Toribio Mejia Xesspe, who spotted them while hiking through the surrounding foothills. However, the grand scale of the designs were not widely known until the 1930's, when aircraft spotted them while surveying for water. They were designated a UNESCO World Heritage Site in 1994. In 2018, Peruvian archaeologists announced they had discovered more than 50 new geoglyphs in the region, using drone technology to map the landmarks in unprecedented detail.

✔3. There are three basic types of Nazca Lines: straight lines, geometric designs and pictorial representations. There are more than 800 straight lines on the coastal plain, some of which are 30 miles (48 km) long. Additionally, there are over 300 geometric designs or geoglyphs, which include basic shapes such as triangles, rectangles, and trapezoids, as well as spirals, arrows, zig-zags and wavy lines.

✔4. The Nazca Lines are perhaps best known for the representations of about 70 animals and plants, some of which measure up to 1,200 feet (370 meters) long. Examples include a spider, hummingbird, cactus plant, monkey, whale, llama, tree, lizard and even a many-legged mythological creature sticking out its tongue. The Nazca people also created other forms, including a humanoid figure which has caused much speculation as to “his” nature and has been nicknamed “The Astronaut”. These biomorphs are grouped together in one area on the plain. Some archaeologists believe they were constructed around 200 BC, about 500 years before the geoglyphs designs.

✔5. The lines were apparently made by brushing away the reddish iron-oxide covered pebbles that compose the desert surface and uncovering the white colored sand underneath. The Nazca people most likely used simple surveying techniques in their work, utilizing stakes to create straight lines. Evidence of this technique exists in the form of wooden stakes found at the ends of some of the lines. The large pictures were probably made using a grid system, starting with a small gridded picture that was reproduced on the ground in a much larger scale.

✔6. But the biggest question on everyone’s mind is WHY they were built, which has led to many theories, some crazier than most. One theory suggests they were related to the stars and acted as a giant observatory. Another thought they were a giant landing pad for ancient visitors from space. The explanation most in keeping with what is known about the Nazca culture is that they were guides for ceremonial religious processions where the Nazca prayed to various gods about crops and water. A most recent theory confirms that they were most likely related to water. It has been discovered that ancient aqueducts, called puquios, seemed to be connected with some of the lines, so the shapes may be acting as a giant map of the underground water sources traced on the land.

Despite being studied by numerous anthropologists, ethnologists, and archaeologists, not to mention new-agers, ancient astronaut theorists, and alien enthusiasts, the Nazca Lines remain a mystery and we may never truly know why they were created. What we do know, though, is that they are incredibly fascinating. If you would like to see the lines, they are best viewed from the air. Local tour agencies have small plane tours that leave from the nearby cities of Nazca, Pisco, or Ica.

Deck of Cards Challenge

For this challenge, you will read 52 books. There will be one task associated with each of the 52 cards of the standard deck. This challenge is open-ended from your start date.
To complete this challenge, first get your "deck." You can either shuffle an actual deck of cards and then record each card in order for your list, or you can go to https://www.random.org/playing-cards/ and use "52" for the number of cards, 1 for the number of decks, and select "Show cards as text instead of images." Then click "draw cards" and cut and paste your list into your challenge template thread post here.
Once your randomized card list is posted, find the task that corresponds to your first card, etc from the master task list. You can work on five tasks at a time. You must start with the first five tasks. You can work on those five "simultaneously" - meaning, you don't have to finish task 1 before beginning task 2. Once you have finished any of the first five tasks, you can add task 6 into the mix, so that you still have five open tasks but no more than that. Once you have finished a second task, you can move task 7 into your list of five working tasks, and so on. The first five "unfinished" tasks on the list always make up your "working" tasks. This will keep a difficult "early" task from preventing you from making progress in the challenge as a whole.
The tasks are *loosely* based on the association of Spades with conflict and power, Hearts with love, family, spiritual growth and joy, Clubs with work/working class issues, and Diamonds with material wealth. There are also tasks associated with red and black, and with the literal meaning of the words (spade as shovel, for example, or diamond as jewelry) or associated with the number of the card (as in a task that requires you to find a number of something).

Ace of Spades - Read a book where the main character is a person of color.
Two of Spades — Read a book where two characters have a fight or disagreement or with a character you would describe as “a warrior” or “warlike.” If the latter, who is it?
Three of Spades - Read a book with a largely black cover (more than 50 percent).
Four of Spades - Read a book with a title in black and all capital letters.
Five of Spades — Read a book with a character in one of these five professions - banker, politician, soldier, law enforcement officer or CEO of a company with more than 10 employees.
Six of Spades — Read a book with a shovel on the cover or used in the book somehow (show the cover or, using spoiler tags if necessary, briefly tell us how it is used.)
Seven of Spades — Read a book published on the 7th of any month, in July of any year, or in 1997, 2007, or 2017. Tell us when it was published.

National Dishes Report #12
This month we added 22 new items to our tallies. We added first time virtual visits to Cyprus; Syria; Palestine; Canada and China's Shaanxi Province. Highlights were the Turkish Koufta Tajine- a sort of meat and vegetable pie...and the Chongqing HotPot. Biggest surprise was learning that Hawaiian Pizza originated in Canada..not Hawaii. Another discovery... finding another flavor of Mexican Mole which we didn't know existed...Blanco.
Overall, we have tried 450 dishes. 287 of those are from 73
Countries and another 163 are from 50 distinct National Regions.

1. Fish Ambul Thiyal
As you'd expect from an island, seafood plays an important role in Sri Lankan cuisine. Fish Ambul Thiyal (sour fish curry) is one of the most beloved varieties of the many different fish curries available. The fish - usually something large and firm, such as tuna, is cut into cubes, then sautéed in a blend of spices including black pepper, cinnamon, turmeric, and garlic. Perhaps the most important ingredient is dried goraka,
a small fruit responsible for giving the fish its sour flavor. All the ingredients are simmered with a small amount of water and cooked until the liquid reduces. This allows the spice mixture to coat each cube of fish. Originating in southern Sri Lanka, it's available throughout the country and is best eaten with - you guessed it - rice!

2. Kottu Roti
Over the traffic and noise of a Sri Lankan market, you'll likely hear the clanking of metal on metal and know kottu isn't far away. It is one of Sri Lanka's national foods and a very popular street food. It's made with a flat, crispy bread known as godamba roti. When you place an order, the kottu chef will fry and chop the roti with a selection of ingredients of your choice. The result is a tasty mixture of salty pieces of fried dough, lightly spiced and extremely comforting. Some of the most skilled kottu chefs compose their own unique rhythmic songs, as they use their knives against the metal frying surface. 3. Lamprais
Sri Lanka has been influenced by a diversity of cultures and one of the most evident is the Dutch Burgher community. Lamprais, a word that combines the two Dutch words for "lump" and "rice," is a combination of meat, rice, and sambol chili sauce. The rice is first cooked with a meat stock infused with clove, cardamom, and cinnamon and then
a scoop is placed in the center of a banana leaf, along with a mixed meat curry, two frikkadels (Dutch-style beef balls), blachan (a shrimp paste) and a starch or vegetable, like plantain or eggplant. The package is folded into a parcel and steamed. Original recipes called for beef, pork and lamb, but chicken and eggs are often included in a modern lamprais, along with vegetarian versions.

4. Hoppers or Appa
Hoppers, also know as appa, are an iconic food of Sri Lanka and their answer to the pancake. The batter is made from a slightly fermented concoction of rice flour, coconut milk, a hint of sugar and often a splash of toddy, a Sri Lankan palm wine. A ladle of batter is fried in a small wok and swirled around to even it out. Hoppers can be sweet or savory, but one of the local favorites is egg hoppers. An egg is cracked into the bowl-shaped pancake, creating the Sri Lankan version of an "egg in the hole." Egg hoppers are garnished with lunu miris, a condiment of onions (luma), chilies (miris), lemon juice and salt.

5. Kukul mas Curry
Kukul mas curry (chicken curry) is a common household dish in Sri Lanka. There are many variations depending on region and taste preferences. Spices like fennel seeds, cardamom, cloves and cinnamon sticks are tempered in hot oil before being combined with chicken and spices like chili powder, curry powder, turmeric, pandan leaves, and lemongrass. Coconut milk contributes to the rich base of the curry gravy. Depending on the recipe, a puree of tomato is often included. The chicken is stewed for an hour or so until the essence of the spices is infused into the chicken. Most satisfying when served with hot rice and roti.

6. Polos
Jackfruit is from the fig, mulberry, and breadfruit family and the trees are grown throughout the country. The fruit has a starchy texture and Sri Lankans consume it in a number of different stages of ripeness, from very ripe and sweet to green and starchy. Polos is a curry prepared with young green jackfruit. It is sliced into bite-sized chunks and boiled until soft. It is then cooked with onions, garlic, ginger and roasted spices like mustard seeds, turmeric, chili powder, lemongrass, and cinnamon. The final step is to add coconut milk and simmer to reduce most of the liquid, leaving all the beautiful flavors within the cubes of jackfruit. Polos is a standard dish available at most Sri Lankan curry restaurants.

7. Gotu kola Sambol
One of the most readily available green vegetable dishes in Sri Lanka is gotu kola sambol. Gotu kola (known in English as Asiatic pennywort) is a small leafy green vegetable used as a medicinal herb in Asia. It's shredded into slivers, then combined with shallots, tomatoes, fresh grated coconut and chili and seasoned with a dressing of salt, pepper and lemon juice. The word sambol is the word used in Sri Lanka to describe a dish or garnish that is prepared using raw ingredients. Gotu kola has a powerful, herbaceous flavor similar to kale, making it an extremely fresh and crisp dish. It's typically a side dish served with curry and rice.

8. Wambatu Moju
Wambatu moju is an extremely flavorful side dish that is served mostly with rice and curries. It is a candied eggplant (brinjals) pickle. The eggplant - usually the purple-skinned, long and slender variety - is cut into bite-sized wedges and deep fried, giving the eggplant a crispy texture with a soft and silky interior. It's then caramelized with a spoon of sugar, vinegar, red onions, green chilies, mustard seeds, chili powder and a hint of turmeric powder until the color turns almost black. Take a bite and the soft, juicy texture of the eggplant should melt in your mouth. The slightly sweet, sour and salty contrast is absolutely sensational.

9. Kiribath
Kiribath is a dish which is prepared for special occasions in Sri Lanka. It represents prosperity and good luck, and is an integral part of Sinhalese culture. It is traditionally served to commemorate new beginnings and is often given to children as their first solid food. There are many versions of kiribath, but the basic dish is prepared by boiling the rice and cooking it with coconut milk and a pinch of salt. Once the consistency of the mix becomes sticky, it is left to set. Then the mixture is cut into slices. It is popularly garnished with the traditional chili sauce, lunu miris.

10. Wood Apple
It wouldn't be a Sri Lankan food discussion without mentioning this! The wood apple is a Southeast Asian fruit about the size of a husked coconut. It also has just as hard of a shell, and a pungent, almost blue cheese aroma. Walking through a market in Sri Lanka your nose will detect it long before your eyes do. Inside the shell is a dark brown paste that resembles something between tamarind pulp and fermented raisins. Wood apple can be eaten directly out of the shell, but one of the most popular ways to consume it is in a thick smoothie, known as wood apple juice. The fruit is blended with sugar and water to smooth it out and offers a unique sour and sweet flavor. Mention that you love wood apple to any Sri Lankan you meet, and they probably won't be able to hold back a knowing smile.
