What's the Name of That Book??? discussion

I read this book in the mid 2000's, and unfortunately I don't remember who the author was (name or gender). I do remember it was a short book and this story was not part of an anthology or collection of stories like Grimm Brothers or something.

I remember it as a retelling of Cinderella but I may be wrong. The title may have been something German like Brunhilde/Brunehilda/Bunhilde or something like that but the book was in English.

From what I can remember the main character is a young blonde girl who is an apprentice and sleeps on the hearth each night with woven mats. I remember a scene where she is at the market trying to buy fish or an eel and there was a description of it having a swollen head like maybe it was rotten or otherwise not fresh. There was also mention of bloodletting and/or leeches, like she had to collect leeches or was put off by the idea of bloodletting.
