By the way, guys. If any of you have trouble eating enough fruit, if you just freeze some fruit (e.g. halved strawberries or quartered bananas) and then blend it after it's frozen, it tastes better than normal, almost like ice cream.

Years ago, my grandma introduced me to frozen grapes. They are like mini popsicles!

Yes, I love frozen fruits! Frozen blueberries and cherries are my favorite.

One thing I haven't cooked but would love to are eclairs, have any of you cooked 'em before?

Shannon Sulkowski | 626 comments I have never made eclairs but I would love to try! Sometimes I make bonfire bread which looks like an eclair lol. Essentially you just take the dough, wrap it around a stick, bake it over a fire, and then while it’s still hot fill it with whatever you want. Some people use jelly and jam, some people use chocolate, some people use cream cheese, some people use peanut butter… It’s just all delicious to me lol

I was going to try to make eclairs for a Mother's day tea, after checking out this book: Maison Kayser's French Pastry Workshop
by Eric Kayser ; the recipe looked simple enough.
I ended up making peppermint bonbons, scandinavian pecan cookies, and mini chocolate cupcakes instead. :)

2 boxes of Spice Cake Mix
1 pd canned Pumpkin
1 cup of water

Optional: Chocolate Chunks

Mix all, bake at 350° for 20 minutes


Sounds simple but it turns out amazing!

I just try this brownie recipe and I substitute the sugar with maple syrup, it was delicious 😋. You can adjust the sweetness to your liking.

ESH read (esh_read) | 220 comments ok... this is a perfect recipe for a fantasy book club. It's called Tirian's Battle Cookies, and is inspired in book 7 of the Chronicles of Narnia.

On chapter 8, Tirian, the last king of Narnia goes into a battle against the fake Aslan. At some point, he and his allies take a break behind a big white rock to get some refreshment (water and cookies!).
As we also face daily "battles", both fisically and spirituality, is always good to take some time for a refreshment, both fisically (maybe with cookies...) and spiritually (in the Word of God). So, may this recipe be some kind of inspiration...

2 cups of all-purpose flour
1 cup of finely ground almonds
1 cup of milk powder
1 teaspoon of baking soda
1/2 teaspoon of salt
2 teaspoons of ground cardamom
1/2 cup of butter
1 cup of sugar
2 eggs

In a big bowl, mix the flour, the ground almonds, the milk powder, the baking soda, the salt and the cardamom.
In a different bowl, using an electric mixer, mix the butter and sugar for about 5 minutes, until you reach a light and soft texture, scraping the bowl's sides whenever needed.
Add the eggs, one at a time, mixing well after each addition, until they are well incorporated.
Add the flour mix to the batter little by little until it os completely incorporated, scraping the bowl's sides whenever needed.
Preheat the oven to 180 ºC. Line a tray with baking paper.
With a spoon, take small portions of the dough. Wet your hands with water and roll the dough into a small ball and flat it slightly before positioning it into the pan with about 1 cm distance in between the cookies.
Bake it for about 15 minutes, until the cookies are slightly golden (but still mostly a light color).
Let the cookies cool down... Then attack!

PS: I had to translate this recipe from Portuguese, so
I hope it's understandable....😅
