Maybe the Swampland series by S.R. Martin? The third book, Endsville, has some weird human-bicycle hybrids.You estimate these were published in the 80s / 90s - is that when you read them? The first Swampland book was published in 1997 so would be too late if that's the case.
I haven’t read the whole trilogy but possibly the oryx and crake series by Margaret Atwood?
