What are your favorite vegan and vegetarian cookbooks? As a vegan I would love to know.

(Also would it be possible to start a vegan/vegetarian cookbook folder, and if you can, a world cuisines cookbooks folder? I posted here but I would love to be able to post about individual cookbooks somewhere that isn't just five star ones.)

I love Ethiopian food, which has a large selection of vegan and vegetarian dishes. Have read pretty much everything on the market.

I love Ethiopian food too. Is there a particular Ethiopian cookbook you'd recommend?

Well, Ive downloaded about 10 in the past 6 months. I would avoid the ones that list rice as an ingredient because honestly, we dont eat rice as staple the way other African countries do. Im currently reading In Bibi's Kitchen, and plan to read Ethiopia: Recipes and Traditions from the Horn of Africa soon.
