Foundling by D.M. Cornish? It is the first book in the Monster Blood Tattoo series. The second book is Lamplighter which sounds more like your description.

It was a book about a young boy who was trying to make his way in the world of gothic/victorian setting that had monsters and hunters. Akin to bloodborne in a way.
Early in the book (first or second chapter) a character is walking the path to town doing his job as a lantern lighter before they get attacked by wolf like things.
It had illustrations scattered throughout in a sketch/chicken scratch style.
I don’t remember any character names and I was only around 9-12 so I don’t have much more info. I’ll update this post if I can remember anything else.
