I bought "A Single Man" from Amazon, but the cover is different from any on Goodreads (the CD edition is the closest to the one I have). It has the same ISBN and page numbering from the University of Minnesota Press edition (0816638624), but a different cover. Is there an easy way for me (who is not a librarian) to add the new cover somehow without making a separate edition and combining it with the original?

No. Alternate covers require new editions. However, you don't need to be a librarian to add a new edition.

You would either have to be a librarian or ask a librarian to do it for you. The latter is common.
