I think the listed author is actually the type/brand/publisher of the course.

Should each language be combined into its own edition? Should another author be researched?

Pimsleur (a real person) wrote the language method. So he is author in that sense. But he does not speak all the languages that are offered, so there are people who help translate and such for each language, but I wouldn't consider them authors.

I am using Pimsleur right now to learn spanish, and it talked about Pimsleur at the beginning of the cds.

Pimsleur also is the name of the publisher.
