Well we don't really know if in the books they didn't use different movements, Rowling might just not have mentioned them. All we know is that in the MOVIES they didn't use movements, and the director might not have had the same thing in mind as J.K. Rowling.

We often don't remember passages like these. That's probably why your question was formed. The movies didn't pay attention to the detail, much unlike Rowling who lavished her novels with detail.
