In this fifth edition we are going to meet Chef Mike from Germany. Mike
is a good friend of mine. We served our apprenticeship together in the same
hotel he is now in charge of the kitchen. This is what I call an amazing story!
Mike is a well versed Executive Chef with enormous task force experience
in many European countries. His greatest assets are definitely his personality
and attitude. Mike knows about his social responsibility and is actively
involved in the Berlin community. He engages in activities such as cooking
demonstrations for school kids.
As usually, let’s dig right into it and see what
Mike has to say:
Mike,
why did you become a Chef?
Since I was a little boy, it was clear to me that I would become an Executive Chef one day. I wanted to change things, things in regards to my team members.
What
made you decide to become an expat?
I never really had the chance to become an Expat Chef, but I had the opportunity to work in a task force in different European countries. Task force means that a kitchen team from one city is supporting another kitchen team of its sister hotel in a different city in Germany, Europe or even worldwide.
How
was your experience being on task force?
I had a great time in those foreign countries. It was not always easy to deal with the different mentalities of those people, but I got along with them. Be helpful and polite to others and you will be treated the same way in return.
Tell
us one story you believe is valuable to share with the world.
A few years ago we were executing a catering event at the Bucharest Soccer Stadium. Unfortunately, we had to bribe the local authorities in order to use the kitchen — we’d been told the kitchen was not up to hygiene standards. I did not understand this claim, because we’d come all the way from Germany with a big team of very experienced people for that event. The kitchen was definitely in a tip top shape! Long story short: corruption is disgusting! It happens, unfortunately, especially in countries with a lower wealth level.
Any
other advice for the youngsters?
Stay true to yourself. Never lose your integrity.
What
is your credo in life??
I am working to live — not the reverse.
What
is it you’d like others to know about you?
Everybody is responsible for her/his own life. Everything changed when I became a father. Kids can tremendously ground you. They are the most honest beings on earth. It is sad to see how people are going down the tube and becoming alcoholics and drug addicts. All this stress and pressure can destroy people. I am very fortunate to have my wife and children. They back me up and give me strength. My family balances me out. They make my life worthwhile.
How
can your story inspire others?
I learn every day. Life experience is like a library. People who claim to know everything are on the wrong side of the track. Everyone can learn from anybody and expand his knowledge constantly. Always keep your eyes open, look left and right but most importantly always look forward … never look back. I’m a positive guy. Everybody must learn from other people’s experiences. Get inspired!
