How early on in the creative/writing process do you decide that "this story is more than 1 book"? How much influence do agents/publishers have?

Deborah Harkness I realized that when my manuscript for ADOW hit the 400 page mark and I was only a third of the way through "part 1". I didn't need anybody to tell me that this was not all going to fit into one book then!
