Could it be Meg Cabot's The Boy Next Door? (it's the first in a trilogy - there are lots of emails in the books)

I'm not certain I recognize the scene you describe or know what specific title you're looking for, but I do have a possible direction for you to check. In contemporary romance, I recall that a few of the books by R.S. Grey have email messages that sort off kick off some of the chapters. I've read a couple of her books and she's awesome for her smart, quirky banter and the chemistry between her main characters.
Try this one:

The first book was pretty good and I thought the book itself was pink with a picture of a cherry but not sure.
They did have the first chapter of the second book in the back and this is the one I seem to remember better.
The woman has red hair and is very shy. Her friends convince her to put on fancy dress and go on a blind date. On the way to the resturant, she trips and scraps her knee. A man helps her to the bathroom where they end up making out.
